Just outside of Owatonna, on the sweeping pastures of Larry Schultz’s organic farm, turkeys roam freely, chickens peck about, and a few pigs grunt within earshot. Late in the afternoon you can see any one of a half-dozen children helping out with the animals. Larry and his family live close to the land, feeling the pulse of the farm in a way that many of us only dream of doing.
A few years ago I convinced Larry, a fourth-generation farmer, to increase his chicken flock to supply organic eggs to Lunds and Byerly’s. Every time I crack a few of these brown beauties over the frying pan I think of Larry’s kids helping to grade the eggs. Last year the Schultzes had enough organic turkeys to sell at our stores for the holidays, and I was among the first to take one home and cook it up for my own family—a luscious, golden 18-pound bird.
What Larry in his modest way calls “a nice turkey flavor” was incredibly delicious with a juicy, pure, and fresh taste that only truly local and organic meat can offer. Leftovers that week were even better.
I love the fact that the main ingredient for my family’s holiday meal comes from here, right in my backyard. The birds are free range, antibiotic- and hormone-free, and they ramble over acres where they thrive from poults to full-grown toms and hens.
